Melissa asked me for this recipe after I gave her pieces of my LEMON CAKE last week so I thought that I would share it with all of you. It is from an old (very old) piece of newspaper (yellowed now) that I clipped from a newspaper in the summer of 1969 and I have been making it ever since. I hope you will make it ~ it is lemon, light, lovely and sooooo easy to make! Enjoy!
1 package lemon flake cake mix
3 -ounce package lemon flavor gelatin
3/4 cup water
1/2 cup salad oil
Empty cake mix into large bowl. Add remaining ingredients. Blend at low speed of electric mixer just to moisten. Beat 3 minutes at medium speed or with a spoon until creamy. Pour batter into a 10-inch tube pan which has been lined on bottom with paper. Bake at 350 degrees, 50 to 55 minutes, or until cake tester inserted into center comes out clean. Cool in pan 15 minutes. Loosen from sides and center of tube with knife and gently remove cake. Cool on cake rack.
To make lemon glaze, place 1 cup sifted confectioners' sugar in small bowl. Gradually add 1 tablespoon hot water, blending well until mixture is thin enough to spread. Add 1/8 teaspoon grated lemon rind. Spread over top and allow to run down sides of cooled cake. If desired, sprinkle with additional grated lemon rind.
